Fudgy Triple Chocolate Banana Bread

Made with cocoa powder, chocolate greek yogurt, and puddles of dark chocolate chunks, this Triple Chocolate Banana Bread is basically the child of a moist chocolate cake and a rich fudgy brownie without all the dishes, wait time, or refined sugar.

This year's Thanksgiving was quite different that I was expecting.

My immediate family and I hadn't been together in two years, so I was looking forward to some quality time with them. My parents had rented an Air BnB for us to stay at for the week, and my dad's extended family would join us for Thanksgiving dinner.

The Friday before the holidays, my parents were both tested for COVID-19 just to be assured they could travel. Well, just hours before flying to Utah, we found out the my mom's test results came back positive.

So that left my husband and I with my two younger brothers in a big Air BnB in Salt Lake City for the entire week. It's been good to just have some intimate time with the four of us, but I wish my parents could've been with us!

What's been keeping me optimistic is dreaming of all the upcoming holiday baking recipes for the blog! And you know what?

This One Bowl Fudgy Triple Chocolate Banana Bread just couldn't wait any longer. It's the fudgy brownie cousin of my Best Chocolate Chip Banana Bread and you need it in your life👏�!

Chocolate chocolate chocolate!

This recipe is every chocolate lover's dream. It's rich and fudgy without being too dense or sweet, and it's secretly healthy, too!

The three types of chocolate are:

  1. Unsweetened cacao powder: tastes just like unsweetened cocoa powder but it still has all the vitamins, fiber, and antioxidants in it! You can use cocoa powder if you can't find any.
  2. Chocolate greek yogurt: myhas single serving cups with tons of different flavors like banana cream, salted caramel, mixed berry, and chocolate Using this delicious chocolate yogurt not only adds another source of chocolate but a boost of protein as well!
  3. Sugar free baking chocolate: my favorite baking chocolate is Lily's Dark Chocolate Bar (not sponsored) because I get to enjoy everything wonderful about chocolate without all the refined sugar. How to make triple chocolate banana bread

You'll love this recipe because it's made entirely in ONE bowl.

Now, you might be thinking you can just toss the ingredients in in any order, but to ensure the best results, let's break down the simple steps for this one bowl recipe:

Step 1: mash the bananas

I use a fork, but you can use a potato masher too! Just make sure the bananas become a puree with bubbles throughout the mixture.

The best bananas for banana bread are overripe with lots of brown spots.

Step 2: mix the wet ingredients

Add the yogurt, honey, egg whites, milk, and vanilla. Stir until well combined.

The mixture should be thin with lots of bubbles!

Step 3: fold in the dry ingredients

Sprinkle the wheat flour, cocoa powder, cornstarch, baking soda, baking powder, and salt over the wet ingredients.

Gently fold in the batter until a few streaks of flour remain. Be careful not to overmix the batter! This will over-develop the gluten and make your bread dense and flat.

Step 4: chop and fold in the chocolate

Roughly chop the dark chocolate bar into bite size pieces, the fold in just a few times into the batter.

By now you should see little to no streaks of flour throughout the batter and the chocolate should be evenly dispersed.

Step 5: bake

Pour the Triple Chocolate Banana Bread batter into a greased 9x5 bread pan and bake in the oven for 42-45 minutes.

My husband likes to pull the bread out at 42 minutes for a gooey center, but I prefer 44-45 minutes to evenly bake the bread. Trust me when I say those last few minutes make all the difference!

How to store chocolate banana bread

On the countertop

Wait to slice the loaf until you're ready to eat. Store for no more than 72 hours (if the bread even lasts that long!).

In the fridge (preferred)

Store loaf, sliced or unsliced, in a ziploc bag for up to one week. Warm up your slice in the microwave for 20 second before serving.

In the freezer

Let the bread cool completely to room temperature, then slice the entire loaf into individual slices.

Wrap each slice in aluminum foil and store in a ziploc bag for up to 3 months. Thaw at room temperature for 30 minutes prior to serving. Warm in the microwave if desired.

Ingredients

  • 3 large bananas, mashed
  • ½ C chocolate greek yogurt*
  • 1/3 C Stevia
  • 1 large egg
  • 3 Tbsp milk (I use almond milk)
  • 1 Tbsp vanilla
  • 1 1/4 C whole wheat flour
  • 1/4 C cocoa powder
  • 1 Tbsp cornstarch
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3 oz Lily's Dark Chocolate bar

Instructions

  1. Preheat the oven to 350° F and line a bread pan with parchment paper.
  2. In a large bowl, whisk together the bananas, greek yogurt, Stevia, egg, vanilla, and milk until well combined.
  3. Fold in wheat flour, cocoa powder, cornstarch, baking soda, baking powder, and salt until JUST combined. A few streaks of flour should remain.
  4. Fold in chocolate chunks until JUST combined. Do not over mix!
  5. Pour batter into prepared bread pan and bake for 40-45 minutes. I usually do 43 minutes.
  6. Let cool in the pan for 15 minutes, then slice and serve.

Notes

*I use Oikos Triple Zero greek yogurt, but if you can't find the chocolate flavor, you can just use vanilla.
