The Best Chorizo Sausage Breakfast Tacos

These savory Chorizo Sausage Breakfast Tacos are made with turkey sausage, cotija cheese, fresh kale, and NO eggs. You'll love these low-carb breakfast tacos because they're full of flavor, packed with protein, and perfect for meal prep.

When you think of a "classic savory breakfast food," what comes to mind? I always think of eggs first. And while they're a great source of nutrition (omega-3 fats, good cholesterol, and protein), I almost feel like I get hit in the head with the "eggs for breakfast" mentality and it's a total turnoff.

Does that mean I don't ever have eggs for breakfast? No. In fact, these breakfast burritos are one of my favorite ways to have eggs in the morning and I've grown fond of my recipe for the best meal prep egg muffins.

BUT. I try to have healthy breakfast recipes on the blog that don't need eggs.

When I started doing research for "breakfast tacos" and "low carb breakfast tacos," I swear every single recipe called for eggs! It was almost annoying. Like, c'mon people, there are other ways to make low carb breakfast tacos besides using eggs!

So that's how today's recipe for Chorizo Sausage Breakfast Tacos came to be. I wanted an easy breakfast, ready in 30 minutes or less, that had tons of delicious flavor and no eggs. These chorizo sausage tacos are everything I wanted and I promise you'll love them!

Ingredients for these low carb breakfast tacos

  • Chorizo turkey sausage: I found this specific sausage at Walmart and it simplified things so much! I've also seen it at my local grocery store. If you can't find the specific flavor of turkey sausage, just get one pound of turkey sausage and make the DIY chorizo seasoning I included in the recipe card.
  • Fresh kale: note the word "fresh." This is because we want the fresh, crispy kale turned soft from the heat of the skillet, not frozen kale turned soggy from excess water. You can purchase the kale precut or in the original large leaves, but if you purchase the large leaves, be sure to de-stem your kale.
  • Onion: the classic aromatic that boosts the savory flavor of any dish. To save time in the morning, dice your onion the night before and store in a ziploc bag!
  • Low carb tortillas: I personally love this brand (not sponsored) but if you need gluten-free tortillas, you could easily use almond flour tortillas as well. Just know I calculated the nutrition facts using the brand I recommend.
  • Cotija cheese: one of my favorite cheeses! I love cotija cheese because it's small, crumbly, and salty. It also looks like snow, so that's cool too. If you can't find cotija, queso fresco will work too.
  • Homemade jalapeno ranch: don't worry, it takes literally 2 minutes to make! Just throw this store-bought ranch dressing, plain greek yogurt, fresh cilantro, and a deseeded jalapeno into a food processor and blend until smooth. That's it! It makes the tacos SO much more flavorful, I promise it's worth it. You can also make this the night before.

How to make chorizo sausage breakfast tacos

Like I said, I wanted these breakfast tacos to be easy to make, so there's only a few steps here. Plus, you can do half the work during your weekly meal prep or the night before!

Step 1: crumble and brown your turkey sausage. If you couldn't find the pre-seasoned sausage, you can use a seasoning packet like this one or this one OR make your own homemade chorizo seasoning using the spices below:

  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp cumin
  • 1/2 tsp oregano
  • 1/4 tsp onion powder
  • 1/4 tsp black pepper
  • Pinch of cinnamon

Add in the onion and minced garlic while the sausage cooks. The oils from the sausage will help soften the aromatics faster and reduce the total amount of oil you need.

Step 2: prepare the jalapeno ranch. This homemade dressing is foolproof and you will LOVE it! Just make sure to deseed your jalapeno or else your mouth will be on fire haha. (I have a 15 second tutorial here to help you out!) Add all the ranch ingredients to a food processor or blender and blend until smooth. Yum.

Step 3: serve! Grab your tortillas and spoon 1/4 cup of the prepared sausage mix on top, then sprinkle 1 teaspoon of cheese and 1 tablespoon of ranch on top. That's it! Breakfast is served!

Ingredients

For the Tacos

  • 1 lb. Jennie-O Chorizo chorizo turkey sausage* (see notes)
  • 8 oz. fresh kale
  • ½ onion
  • 2 cloves garlic
  • 16 low carb street taco tortillas
  • ⅓ C cotija cheese

For the Jalapeno Ranch

  • ½ C Bolthouse Farms Ranch Dressing
  • ¼ C nonfat plain greek yogurt
  • ¼ C fresh cilantro
  • 1 jalapeno, deseeded

Instructions

  1. Heat a large skillet to medium-high heat and spray with cooking spray. Saute onion and garlic for 2-3 minutes, then add in the turkey sausage (and seasonings, if using). Brown and crumble sausage until little pink remains, about 5 minutes. Fold in the kale and allow to soften, about 2 minutes. Drain any excess liquid or oil and add the taco mix to a large bowl.
  2. Meanwhile, make the jalapeno ranch by adding all "ranch" ingredients to a food processor or blender and blending until smooth.
  3. To serve, scoop ¼ cup of taco mix onto a tortilla and top with 1 teaspoon cotija cheese and 1 tablespoon jalapeno ranch.

Notes

*I've been able to find this specific flavor of turkey sausage at most stores, but if you cannot find it, just grab one pound of Jennie-O turkey sausage and a packet of chorizo seasoning from the international aisle.
