Single Serving Dark Chocolate Raspberry Waffle

This Dark Chocolate Raspberry Waffle for one is ready in less than 15 minutes and is infused with cocoa powder and dark chocolate chips, then topped with fresh raspberries. It's simple, easy to make, and incredibly delicious. It tastes like dessert!

I love summer because all the fresh fruit prices drop significantly, but for some reason raspberries aren’t included on that list! I guess I could purchase frozen raspberries from Walmart and let them thaw, but it’s not the same you know?

But Brooke, this post has raspberries in it…YES!

I found a screaming deal on raspberries at my local grocery store so I wrote a recipe to celebrate. Even better, it’s a recipe for a single serving waffle, which means you don’t have to share!

I also wanted to start a series of single serving waffles because I want nice breakfasts even when I have to go to work (or college when that was a thing). Why wait until Sunday mornings to enjoy such a yummy, decadent waffle?!

Ingredients You'll Need

Because this recipe is a single serving recipe, you don’t need many ingredients! It’s wonderfully simple AND healthy and that’s what Ka Pai Cooking is all about! To make this delicious waffle, you’ll need:

  • All-purpose flour: to make a light and fluffy waffle. I’ve tested this breakfast with whole wheat flour and oat flour and they’re not as tasty (or traditional)!
  • Cocoa powder: because this IS a dark chocolate waffle, right?
  • Baking powder AND baking soda: using a combination makes sure your waffle rises and spreads just right without the taste of chemicals!
  • Egg: just one egg is enough to bind all the other ingredients together and enrich the batter. I do not recommend using a flax egg, egg whites, or applesauce—your batter either won’t bind together or it will be incredibly dense!
  • Milk: helps thin out the batter and make it fluffy! I always use almond milk, but any milk will work.
  • Vanilla extract: use an entire tablespoon here to enhance the chocolate flavor! ‘Vanilla + chocolate’ is like ‘sweet + salt’ — it’s just magical.
  • Dark chocolate chips: totally optional but highly recommended! Fold into the batter after mixing the wet and dry ingredients.
  • Fresh raspberries: adds color, vitamins, and sweetness to the waffle. They’re also a wonderful combination with chocolate!

How to Make a Single Serving Waffle

Again, because this is a single serving recipe, the ingredients and steps aren’t too hard, but there are a couple tips and tricks to keep in mind, here. I’ve been testing single serving waffles for about two months now and found that doing these five things will make sure you’re waffles are amazing every single time:

  1. Don’t heat your waffle iron before you make the batter—we’re going to use the preheat process as a timer for making sure the batter is ready to go.
  2. Let the batter sit—the baking powder and baking soda need time to do their thing (leaven the batter) before you pour it onto the hot waffle iron or else your waffle won’t rise. I’ve found the best and easiest way to time the resting period is to finish mixing the batter, THEN heat the waffle iron (as mentioned above).
  3. If you’re adding chocolate chips to the batter, fold them in AFTER you’ve let the batter sit and the waffle iron heat up. If you mix them in before letting the batter rise, they’ll all sink to the bottom and you’ll get one giant glob of chocolate in the middle of your waffle (which doesn’t sound too bad, honestly, but the goal is to enjoy chocolate in every bite!).
  4. Use a spoon to spread the batter around the waffle iron—your waffle mix is going to be thick, so it won’t spread as easily. When pouring it into the waffle iron, spread it with a spoon all the way to the edges before closing the iron.
  5. Don’t substitute any ingredients! I can’t stress this enough. Each recipe (including this one!) has been tested 9 or 10 times until it’s perfect. Baking is a science, and single serving waffles are a special beast of that science. Trust me when I say that not all baking substitutes are created equal.

Ingredients

  • ½ C all-purpose flour
  • 2 tsp cocoa powder
  • ½ tsp baking powder
  • ¼ tsp baking soda
  • 1 egg (large)
  • 3 Tbsp milk (regular or dairy-free)
  • 1 Tbsp vanilla
  • 2 Tbsp mini chocolate chips (optional)
  • Raspberries (for topping)

Instructions

  1. Whisk together the flour, cocoa powder, baking powder, and baking soda in a small bowl.
  2. Mix egg, 2 tablespoons milk, and vanilla in a glass measuring cup (or another bowl). Fold in dry ingredients and mix until just combined. If the batter seems too thick, add the remaining tablespoon of milk.
  3. Heat your waffle iron.* Once heated, fold in the chocolate chips to the batter and pour waffle batter onto the waffle iron. Cook until done.
  4. Serve warm with maple syrup and raspberries!

*If you got excited and heated your waffle iron before making the batter, let your batter sit for 5 minutes. For more information, see blog post.
