30 Minute Hawaiian Sloppy Joe Sliders

These Healthy Hawaiian Sloppy Joe Sliders are easy to make and perfect for feeding a large crowd. Each Hawaiian Roll is stuffed with ground turkey, homemade BBQ tomato sauce, fresh pineapple, and shredded cheese. They're addictingly delicious!

Ingredients

  • 1½ lbs. Jennie-O 93% lean ground turkey
  • 1 red pepper, diced
  • 1 onion, diced
  • 4 oz. mushrooms, minced
  • 3 cloves garlic, minced
  • ½ tsp ground ginger
  • 8 oz. tomato sauce
  • ⅓ C Stubb's BBQ Sauce
  • 20 oz. sliced pineapple
  • ¼ C G Hughes Sugar-Free Sweet Chili Sauce
  • 2 Tbsp low-sodium soy sauce
  • 2 Tbsp tomato paste
  • 1 Tbsp Stevia
  • ½ Tbsp mustard
  • 1½ C low-fat shredded mozzarella cheese
  • 24 Hawaiian sweet rolls
  • ⅓ C diced green onions (for garnish)
  • 1 Tbsp sesame seeds (for garnish)

Instructions

  1. Preheat the oven to 400°F and spray a 9x13 baking dish with cooking spray. Set aside.
  2. Heat a large skillet (I use a 12" cast iron skillet!) to medium-high heat and spray with cooking spray. Add the diced red pepper, onions, and minced mushrooms with a sprinkle of salt. Saute for 5-7 minutes until soft. Add in the ground turkey, garlic, and ginger and cook until the meat is no longer brown, about 3-4 minutes.
  3. Add the tomato sauce, BBQ sauce, ⅓ cup pineapple juice, sweet chili sauce, soy sauce, tomato paste, Stevia, and mustard to the skillet. Stir until well combined. Cover with a lid and simmer over low heat while you prepare the sliders.
  4. Slice each Hawaiian sweet roll in half like a hamburger bun, then place all the bottom buns in a 4x6 array in the prepared baking dish. Spread the sloppy joe filling in an even layer over all the buns, all the way to the edges. Layer on the pineapple slices (optional), then sprinkle on the cheese and top with the top buns. Spray the rolls with cooking spray and cover with foil.
  5. Bake for 15 minutes, then let sit with the foil on for 2-3 minutes before serving. Garnish with green onions and sesame seeds.
